Our distinctive Alligator Boudin Balls are made with a special recipe, apart from our normal boudin recipe. This boudin (without the casing, of course) is rolled into balls, battered, and then breaded to produce a very high quality fast-food product. The flavor is a bold, very flavorful Alligator Sauce Piquant, the texture is crispy (not soggy & greasy), and the balls stay together in the hot oil! Deep-fry from Frozen at 350° F for about 8 to 9 minutes, or until the centers are steaming hot (160° F)! Use any of your favorite dips for a delightful treat! Our Boudin Balls are sized to be 12 Balls per Pound. 

We blend only the finest fresh ground pork with steamed long grain rice, cooked with onions, parsley, green onion tops, and a careful blend of Cajun seasonings. We then stuff the savory mixture into a natural pork sausage casing. The links are then cooked prior to serving. A traditional Cajun favorite! No MSG! Low Saturated Fat! Gluten-Free!

This savory “Sauce Piquant” is mixed with freshly steamed long grain rice and is then stuffed into a natural pork casing. The links are cooked prior to serving… A Cajun Shrimp-lover’s treat! No MSG! These are made similar to the recipe of our Shrimp Boudin, which has a very flavorful Cajun Sauce Piquant base. Cajun Bites are small, bite-sized, and great for parties, catering, and receptions! They fry very quickly from frozen (@ 350° for about 3 minutes) … a plus for cooks under time pressure!  Our Shrimp Cajun Bites are perfect on an appetizer tray with a dipping sauce of your choice! Cajun Bites weigh an average of 26 Bites per Pound.  Fries up in 3 minutes!
